Unless you’ve been hiding under a rock, I’m sure you’ve heard that kale is kiiiiiind of healthy. Everyone has been calling it a super food for years because of all of the health benefits that accompany kale.
It’s low calorie
Fat free
Vitamin packed
And has enough iron to rival beef.
So, naturally when the “kale craze” began, I jumped on the bandwagon. I eat plenty of leafy greens—what’s one more??

At least it is when it’s raw or by itself. There’s a reason it’s used as a garnish! It’s very bitter, although if you can find smaller leaves, they tend to have a milder taste. My brand is that “healthy and delicious deserve each other.” I eat healthy, but only if it has a great flavor. Even with all of the health benefits, I couldn’t stomach eating kale. I just didn’t like the taste.
That is, until I discovered kale chips.
Prep time: 5 minutes | Cook time: 20 minutes | Total Time: 25 minutes
Yields: 2 cups
Ingredients:
2 cups kale
1 tbsp olive oil
salt and pepper to taste
1. Preheat oven to 300.
2. Rinse leaves thoroughly and pat them dry.
3. Separate the kale leaves from stems by pulling them apart with your hands. Discard the stems.
4. Tear in ~1 inch pieces and place on baking sheet.
5. Drizzle with olive oil and add salt and pepper to taste.
6. Place in preheated oven X ~10 minutes.
7. Flip over with spatula or tongs and bake an additional 10 minutes.
The Cook’s 2 cents:
· Because of its curly leaves, kale holds a lot of dirt. Be sure to rinse thoroughly unless you feel like eating gritty chips.
· I rinse mine in a salad spinner and then add the oil, salt, and pepper while it’s still in the spinner. I feel like you lose some of the oil (and thus, the fat) this way. It also has the added benefit of mixing it a little better.
· Because I’m a true meal prepper, and since I loved the taste of these so much, I decided a would make a big batch and place in baggies for the rest of the week…. It didn’t work. Unfortunately, this is not a make ahead dish. The premade baggies turned out not to hold the crunch of the fresh chips. I wouldn’t recommend doing this!
